Depending where you live, like me, you may be experiencing the sadness from lack of sun and the chill of the cold. This is the time those of us in colder climates are daydreaming about Florida.
It would be lovely to have a smoothie, but who wants a cold smoothie on a cold morning! Although I have to say, the other day, one of our amazing EBV Recovery Programs students reported that adding some hot water to a morning smoothie was just fine and her smoothie was just as delicious. Just saying…
And this is the season of Hallmark movies and all the pancakes and hot cocoa ….. Ugh!!! Everyone is making cookies, families notoriously make those lush pancakes… And yes, I love these movies. They are so positive and lovely. We need more of these stories in our lives.
So what to do!
WAFFLES!!! You CAN make pancakes, but I personally LOVE waffles. If you do too, this is for you!
In the spirit of the Holiday Season I want to share one of my favorite recipes with you. I just took this photo early today before sitting down to breakfast and I thought you might enjoy an idea of some comfort food that is actually good for you and will not trigger more EBV.

NOTE on the recipe:
Depending on the flour, you may need to add more water – be the judge of it. If you make pancakes out of it, I feel crepes are better (think thin rather than thick) for this recipe – but that will also depend on the flour. I do not have a gluten problem so I buy organic unrefined spelt flour from The Berlin Natural Bakery (they ship), but I have used various GF mixes and it will work. You can use 100% buckwheat flour too – it is GF – that works well too and is much better for your health than a refined GF mix.
How to dress your waffles up and balance the meal?
Here are some ideas:
- Because there are nuts and olive oil in the batter, it is already quite balanced
- I had some ripe strawberries a while ago and could not use them fast enough, so I blended them raw with some maple syrup and a little water and froze them in baby mason jars. I just moved one to the fridge, so I will probably pour that over my waffles tomorrow.
- In the photo, I happened to have walnut butter, apple sauce, unsweetened, and blueberries, so that is what I piled up. All organic. You can instead sprinkle walnuts and be creative with the rest. This meal will NOT spike your glucose or tax your adrenals. On the contrary.
- I was able to find a waffle maker with a ceramic griddle!! Healthier.
- Make the whole batch and then freeze them. It is such lovely comfort food and a good feeling to know you have these available for those special mornings when you need a pick-me-up. A toaster oven will bring them to life for you.
