“When I was given a diagnosis of food allergies and intolerances that included among other foods wheat, dairy and eggs, I was devastated. These foods were the mainstay of my everyday diet. Imagine how I felt when I was given the added news that I also was reactive hypoglycemic. I was a carbohydrate addict. I loved and craved sweets. What was i going to do? I was overwhelmed and very anxious. What was I to eat? Would I ever want to cook again? What food choices did I have with all the limitations imposed on me?

I was advised by my doctor to consult with Kasia. She must have heard the desperate tone in my voice since she arranged to meet with me the very next day. She opened up a whole new world of meal planning to me. It was if I had to toss everything out of my pantry and start all over. It was overwhelming.

Kasia got me through a period of anxiety, depression and even tremors. My body was going through withdrawal symptoms from lack of refined sugars. Kasia’s compassion and support throughout this period was nothing short of heroic. Three weeks have passed. I’ve been taught how to pay attention to food labels. I was taught the importance of whole foods, I was given recipes for 3 meals a day and 3 snacks per day. I was told where the specialty foods could be found locally as well as on web sites. I was encouraged to share my daily ups and downs with her. She helped me make corrections and substitutions to my daily meal choices where needed. She was calming when I needed reassurances that I could succeed with this new way of eating. She was knowledgeable on so many nutritional levels and was willing to work as a team with the doctor who had recommended her to me.

After just 3 weeks I have accomplished what I originally thought was impossible. I feel terrific. I have a lot of energy and I look at recipes with a lot of confidence. I have no cravings for simple carbs and I am enjoying the taste of whole foods and grains that I never even knew existed. I intend to consult with Kasia on a monthly basis not only for her knowledge-to pick her brain-but I really enjoy being in her presence. She is special in so many ways.”
